As I mentioned in a previous post, I am more than ready for Fall to be here! I am getting a head start and embracing it fully, by incorporating pumpkin wherever I can. That being said, I was greatly intrigued by the idea of the Pumpkin Pie Martini (that all of us have seen some variation of on Pinterest.) After perusing through about 10 vastly different recipes, I came across one created by a mixologist out of a restaurant in Houston, TX and absolutely loved the technique and combination of flavors. This is that recipe, which actually looks best…but with sweetened condensed milk, it’s guaranteed to pack a calorie punch. (no thanks) Then, I came across an option that (although is quite similar) offers a slightly lower calorie content. (Houston, we have a winner!) Here is that low cal option.
What you’ll need:
Graham Crackers – crushed finely. (You’ll use this to rim your martini glass.)
3 oz of Pumpkin Puree
2 oz of Fat Free Sweetened Condensed Milk
3 oz of Vanilla Vodka
1 oz of Fat Free Milk
In a small bowl, mix together Pumpkin Puree & Condensed Milk til well blended. Sprinkle mixture with cinnamon (or any pumpkin spices of your choice, such as nutmeg etc.) Fill shaker half way with ice. Dollop Pumpkin mixture into the shaker, add vodka, milk; and get to shakin’. Rim your martini glass with finely crushed graham crackers (just as you would rim a margarita glass with salt.) Pour contents of shaker into 2 martini glasses. Recipe makes 2 martinis. Please note that if you do not have a jigger, 1 oz = 2 Tbsp. This is a very rich “dessert” drink. You’ll probably only want about 1, maybe 2.
For a prettier presentation, dollop some condensed milk in the base of your martini glass for a layered look. A cinnamon stick or pirouette would also be a nice addition!
It truly does taste so much like Pumpkin Pie! Best of all…based on my calculations, there are less than 180 calories, per drink (which is pretty amazing for such a rich & tasty cocktail.)Please let me know if you try it out and what you think!
