I had a plan last Friday to set out to make some sort of chicken soup. As usual, I went to Pinterest to compare recipes. After stumbling upon what I thought to be the perfect one, I headed to the market and picked up all the ingredients.
Bran’s roommate came home and asked me what I was cooking and when I told him, he told me that his mom makes his favorite white chicken chili. He happened to have her recipe on hand and when I compared the two…they were almost identical! Hers actually sounded a little better, including the addition of green enchilada sauce; and since family recipes are always the best…I set off to make her version. It was soooo good!
Here’s the Orr Family’s White Chicken Chili Recipe:
1 medium onion1/2 tsp minced garlic1/2 jalepeno (seeded & diced)32oz box of chicken broth15oz can green chile sauce (Hatch or Las Palmas)11oz can corn (white or yellow, drained)15oz can great northern or cannelloni beans (drained & rinsed) juice from 1/4 lime1 tsp cumin1/2 tsp oregano2-3 Tbsp Cilantro
I actually used 2 cans of Great Northern Beans, and 1 Large Shallot instead of the onion & minced garlic.
Top with Pepper Jack Cheese, Tortilla Strips, Cilantro & Sour Cream.
