This is another one of my all time favorite cookies from my Granny Wilson’s arsenal! I remember baking these with her often. They are a VERY soft shortbread cookie with a hint of orange, that is the perfect accompaniment to a warm cup of tea. They are mellow enough for breakfast, but sweet enough for dessert. They are just simply divine!
Orange Delight Cookies
Ingredients:
1 1/2 C Sugar
2 Eggs Slightly Beaten
1/3 C Buttermilk
2 tsp Salt
3/4 Chopped Nuts (I use walnuts)
3/4 C Unsalted Butter
1/2 tsp Vanilla
3 Cup Flour
1/2 tsp Baking Soda
1 1/2 Tbsp Orange Rind
Directions:
Preheat oven to 375. Mix sugar, butter & eggs until creamy. Mix dry ingredients in a separate bowl. Add Orange rind, vanilla & nuts to creamy mixture. Then begin to add the dry ingredients & buttermilk and mix until blended. Drop by tsp on greased cookie sheet (or parchment lined cookie sheet.) Bake 12-15 minutes.
Orange Delight Icing:
2 tsp Orange Rind
1 C Powdered Sugar
1-3 Tbsp Orange Juice (use juice from orange)
Mix ingredients, and add powdered sugar/OJ until desired consistency. (think royal icing) After cookies have completely cooled, drizzle icing over them. Let stand til dry.
