I first experienced this amazing dip at my Aunt Linda’s house for a holiday celebration. I was immediately hooked! Since then, every time I make this yummy dish there are at least one or two tasters that ask for the recipe. In fact, I made this for a baby shower this weekend and had the mommy to-be’s mother and mother-in-law ask me for the recipe. Good news is, it couldn’t be more simple. Even more good news, you can really make it your own by adding as little (or as much) of the ingredients as you like. My old roommate even adapted this recipe from me by adding in her own touch, such as garbanzo beans, olives, etc. To each his (or her) own.;)
Texas Caviar
adapted from a family recipe
2 cans Black Eyed Peas (drained & rinsed)
3 Roma Tomatoes (seeded, diced-I only use the flesh)
2 Avocados (diced)
1 Bunch Cilantro (chopped)
1 Bunch Green Onions (chopped)
1/2 to 1 Bottle Kraft Zesty Italian Dressing (or similar)
Pita Chips or Fritos, for dipping
Mix all ingredients together. Dip. Enjoy 🙂
**Best if you let sit in fridge for several hours to let the flavors absorb. I usually mix everything together, except the avocados, and let the dip sit for several hours or even overnight. Then add the avocados at the last minute, so they don’t brown.**
