I have to say, I rarely eat mashed potatoes (unless they are sweet) but after recently discovering pesto mashers on our honeymoon, it was love at first bite. It is the absolute PERFECT pairing with white fish!

In an attempt to recreate one of our most beloved dishes, at what would turn out to be our favorite restaurant on the island, I set out to recreate a honeymoon experience for my Mr. and surprised Brandon last week with grilled Mahi Mahi and Pesto Mashed Potatoes.
They were absolutely divine, and super easy! Like I already said, the PERFECT accompaniment to white fish. Give them a try. They will not disappoint!
Pesto Potato Mashers

2 1/2 lbs red potatoes, peeled and cubed
1 cup chicken broth
1 jar store bought pesto
Boil potatoes in water until soft, about 15 minutes. Drain the potatoes and return to hot pot. Pour in broth & mash potatoes. Gradually add pesto, to taste. (Add a much or as little here as you like.)
Serve with some grilled Mahi Mahi or Halibut, and enjoy! Nom, nom, nom
