For years I’ve stuck to a strict morning routine of oatmeal with blueberries and cinnamon for breakfast. Oatmeal was something my great grandmother would make for me often as a child, so there’s a bit of nostalgia wrapped up for me in every bowl. Plus, being a creature of habit, this routine works well for me.
That being said, the past month has brought about A LOT of change for me, and it’s most evidenced in my morning eating choices. Lately I’ve been turning to avocado toast, eggs, and bananas with peanut butter – to name a few. However, it was in San Diego that I discovered this little gem.
It was love at first bite when I was introduced to the Acai Bowl, and it’s safe to say I’m hooked. I came back to Colorado with a bug to get in the kitchen and create my own. Here’s my take on my new found fruit-filled favorite.
Acai Bowls:
(1 Serving)
1 Sambozan Acai Pack (found at Sprouts or Whole Foods)
1/2 – 1 Banana (depending on the consistency you want)
2 Tbsp Coconut Water or Apple Juice
Mixed Berries (I also used Mango!)
Granola & Coconut for topping
Place contents of acai pack, banana and liquid in blender. (I use a Ninja) Blend until smooth. Pour into serving bowl and garnish with berries, remaining banana (if any), granola and coconut. Enjoy!
