Happy Monday! I know, I know… I don’t want to get out of bed either, but I have a recipe today that will make it a bit easier. I have shared my recipe for my collagen coconut oil coffee over on Insta a few times, but I wanted to get it up on the blog for those who follow here.
I started putting coconut oil in my coffee about a year ago, and have seen crazy results with my cognitive function. (Disclaimer, I am in no way a doctor, I’m just sharing my results and how I believe it’s helped me, personally.) I used to suffer with “brain fog” and extreme fatigue, and all I know is that I haven’t had either of those things since I started putting coconut oil in my coffee. I read some things about the triglycerides improving cognitive function, and I really believe it has helped get rid of the “brain fog”, for me. Beyond that, a nutritionist told me that a coconut oil coffee stabilizes my blood sugar, which is probably why I’ve seen improvements with my fatigue. Beyond that, the coconut oil gives the coffee a super nutty flavor and comes out just like a latte, when blended.
I recently added collagen peptides to my coconut oil coffee, to get a boost of protein in the morning and add collagen to my routine. I have been using Vital Proteins collagen peptides for about a month, and have really started to see an improvement in the elasticity of my skin! I haven’t noticed much change in my hair, but I have pretty healthy hair, to begin with. (I have had friends with really thin hair tell me they felt their hair was thicker, since adding collagen to their routine.) And, if you are wondering, I don’t notice any taste from the collagen peptides at all.
Like I said, the coconut oil coffee makes a sort of latte (like pictured below). I’m sharing my recipe for collagen coconut oil coffee below. I don’t add any sweetener to my coffee, but you could totally add some honey, if you prefer that sort of thing. Also, don’t forget to enter the $1000 giveaway to Nordstrom!
Collagen Coconut Oil Coffee
Cup of Coffee (any size you want)
1 packet Vital Proteins Collagen Peptides (I use the 10oz packets, but you can measure from the canister if you prefer)
1 tsp -1 tbsp coconut oil
Add all ingredients to blender cup, and mix until your collagen coconut oil coffee is well blended. I use the magic bullet, but you can use whatever blender you have. It’s essential to blend the coconut oil with the coffee, as that is what emulsifies it and creates the “latte” effect.

I LOVE Vital Proteins but I've never tried coconut oil, I've got to give it a shot this week!
